Better than Pilaf

One thing I have come to appreciate about my childhood is the fact that my Mom made just about everything from scratch. There were a few things we ate out of box (cheese noodles and Rice-a-Roni are the only things that come to mind) but for the most part everything was homemade. As the years have gone by my Mom has been working on creating her own recipes for the few store bought items we used to buy. I love her new enchilada sauce (even though she still seems to tweak it from time to time) and last fall she gave me this recipe. It is pretty much homemade Rice-a-Roni, but since it used Better Than Bullion, I named it Better Than Pilaf. Most rice pilaf is loaded with butter and pretty bland, but this recipe is light and flavorful. Chris absolutely loves it every time I make it. Thanks Mom!!!!

1 Tbsp Butter
1/2 cup extra long grain rice
1/2 cup Riso pasta
2 1/4 cup hot water
3 tsp Better Than Bullion chicken flavor

Melt the butter in a pot over medium heat. Add the rice and riso then cook to brown it. While browning the rice/riso, mix the hot water and better than bullion until completely dissolved. Once the rice has browned add the water mixture to the pot. Cover and turn down to a simmer. Cook for about 20 minutes depending on your burner.
