I was looking at recipes online this weekend and I came across this recipe for Chocolate Peanut Butter Ice Cream. I had all the ingredients on hand and the ice cream maker ready, so I figured I might as well try it. The recipe seemed too simple and I didn't really expect it to taste good or even thicken into ice cream, but to my surprise it is the best ice cream I have ever made. The recipe doesn't make a lot, but it is so rich you don't really need much to satisfy your sweet tooth. I froze what Chris and I didn't eat and when I took it out of the freezer Monday night to eat a little I was happy to find it hadn't frozen solid. Some homemade ice cream freezes so hard you can't scoop it the next day, but this was so perfect. I'm going to have to make more for Chris when he gets back this weekend, because I don't think this batch is going last that long :)
Makes about 1 quart
2 cups half and half
1/4 cup unsweetened Dutch-process cocoa powder
1/2 cup granulated sugar
pinch of salt
1/2 cup smooth peanut butter
1 cup mini marshmallows (optional, but I recommend it)
1/2 cup chopped walnuts (also optional. I didn't use them, but I think it would be good)
In a large pan, whisk to combine the half and half, cocoa powder, sugar and salt. Heat the mixture, whisking frequently, until it comes to a full rolling boil. The mixture will start to foam a little and you'll know it is done. Remove from the heat and stir in the peanut butter until blended thoroughly.
Refrigerate the mixture until chilled thoroughly. Pour in your ice cream maker and let is spin until the ice cream is nice and thick. The last few minutes add the nuts and marshmallows.

If you have one of the big ice cream makers that calls for ice and all that jazz, I would recommend doubling if not tripling the batch if you are making for a crowed.
