Recipes

While Chris finishes up his homework, I have some time to kill until we can go to the grocery store. I figured I post a few of the recipes from the list of food I made yesterday. Here are the recipes for Crock pot Chicken Tacos and Strawberry Bread.

Crock Pot Chicken Tacos: (found in Simple and Delicious a few years ago)

3 boneless skinless chicken breasts (I buy mine from Costco)
8oz tomato sauce
4 oz green chilies (I get mild, but you can get hot if you like spicy foods)
1/3 cup chopped onions
2 Tbsp. chili powder
2 Tbsp. worcester sauce
1/4 tsp garlic powder

Mix the last 6 ingredients together and pour over the chicken in the crock pot. Cook on low for 5-6 hours. Once meat is cooked through, use two forks to shred the chicken. Mix the meat in the sauce and let sit for a few minutes to absorb juices.

Prepare all the taco toppings you like and enjoy some delicious chicken tacos.

Strawberry Bread: (found on allrecipes.com and adjusted to taste better. See my Valentines day post for pictures)

2 cups strawberries
3 tbsp strawberry jam
3 1/8 cups all purpose flour
2 cups white sugar
1tbsp ground cinnamon
1tsp salt
1 tsp baking soda
1 1/4 cups vegetable oil
4 eggs beaten


Preheat oven to 350. Prepare whatever pan you want to bake it in. 24 cupcakes, 6 tin cans, or two 9x5 loaf pans.

Cut strawberries into small pea size pieces and place in a medium size bowl. Heat 3 tbsp strawberry jam in the microwave, pour over strawberries and stir letting them sit while you mix the rest of the ingredients.

Combine flour, sugar, cinnamon, salt and baking soda in a large bowl: mix well. Mix together eggs and oil. Stir into to strawberries. Add strawberry mixture, blending until dry ingredients are just moistened. Divide batter into pans.

Bake until toothpick inserted comes out clean. Start checking about 25 minutes in.
