To start the day we had Scrambled eggs and ham with wheat toast and left over coffee (I know some people think that is gross, but we like our coffee strong and it saves us from being wasteful.) Anyway, for lunch we had BBQ Chicken Pizza on a Honey Wheat Crust. Now, the toppings on this pizza were to die for, but the crust was a little dense. I'm not sure if it was me (I don't have much experience with crusts) or the recipe, but something is going to have to change next time I make pizza.
This is where I found the pizza crust recipe. I followed her directions, but then divided the dough in half. I froze half and allowed the other half to rise for 30 minutes. I am not sure if allowing it to rise longer would make it fluffier or if it is just a dense crust. If anyone has any tips, I'll gladly take them!
Here was I used to top the pizza.
Bull'seye original BBQ sauce
mozzarella cheese
parmesan cheese
1 chicken breast (cooked and cubed)
pineapple (cut into tidbits)
red onion (sliced thin)
Roll crust out into a 12 inch circle. Spread desired amount of BBQ sauce over entire crust. Sprinkle a thin layer of mozzarella cheese and sprinkle with parmesan cheese. Then top with chicken, pineapple and red onion. Add another small layer of mozzarella cheese on top to hold the toppings on the pizza. Sprinkle with dried parsley and bake. I baked our pizza at 375 for about 20 minutes.
Like I said, the crust was okay, but not exactly what I was hoping for. I do still have the other half in the freezer.
For dinner we're having Chicken Parmesan and spaghetti (Chris's choice) and for dessert. TOPPINGS!!! I love self serve frozen yogurt!
