Tortilla Soup

I have been trying to be creative and come up with other ideas for lunch. Since "winter" is upon us, I figured soups would be a great addition to our regular lunch rotation. I made tortilla soup for the 2nd time last week and it tasted better than I imagined. I don't remember exactly what I did, but here is my best shot.

1 can V8 juice
1 can tomato sauce (maybe more depending on your taste)
1 can beef broth
1/4 cup chopped onions
1 cup frozen corn
1 small chicken breast (cooked and shredded)

I mixed all the above together and added a little garlic powder and chili powder. I let it simmer for about 20 minutes and Waalaa! It was delicious, simple and a nice change of pace.

Serve it tortilla chips and cheddar cheese to make it even more delicious.

That is a good idea. I've made Taco soup but never tried my own version of Chicken tortilla soup. I'll definitely have to try it out. I like simple!!!
