Honey Lemon Chicken Schnitzel

Although Chris's spring break has come and gone, the memories of the delicious meals he cooked me are still in my heart. Chris was such a wonderful husband and while he was on vacation and I was working full time, he took on the roll of "House Husband!!!" He has learned to make a few of the staples on our menu and is getting rather good at them. This is the last meal he made me before the crazy part of Dental school began.

Honey Lemon Chicken Schnitzel

2-4 boneless skinless Chicken breasts
2 Tbsp Flour
1/2 tsp salt
1/2 tsp pepper
2 Tbsp Butter
1/4 cup honey
1/4 cup lemon juice

Place the flour, salt and pepper in a zip lock bag. One at a time add the chicken breasts and shake to fully coat. Set on plate until ready to cook.

Melt butter in a frying pan on medium heat. Once butter is melted add the chicken in the pan to fry. Cook on each side for 3-4 minutes or until juices run clear. Then set the chicken aside in a dish with a lid (or cover with foil) to keep it hot.

In the same pan you fried the chicken in (leaving the left over butter and seasonings) add honey and lemon juice. Stir over medium head until sauce starts to thicken. Once sauce reaches desired thickness add chicken back to the pan and let cook 5 minutes longer in sauce. Then, put the chicken back in the covered dish and pour sauce over it.

Service with white rice and vegetable of your choice!!!
