There's nothing better than meatloaf (at least to me)

Some people may think I'm crazy, but my favorite meal has always been meatloaf, rice&gravy, and corn. Every birthday growing up (to my sisters dismay) it was my meal of choice. Not just meatloaf, but the whole meal exactly as is. No variations. No Substitutes. Luckily, Christopher loves my meatloaf too!! (That is a good thing! because it isn't always "pretty")

Since the whole recipe makes way more than we can eat, after mixing everything together I split it in half and make two mini-meatloafs. Then I cook one and freeze the other. That way I have an easy meal another day when I don't have much time (or ingredients left in the cupboard.)


As Chris says I'll eat anything smothered in gravy. Meat loaf is no exception. Since we have a small table I don't like to put the pot of gravy on the table to take up more space. I don't have a gravy boat (Well I do, but it matches my china and is safely stored at my parents house.) So, instead I use the creamer dish from my tea set. It works perfectly and holds just enough for the two of us.Here's the recipe
Momma's Meatloaf

2lbs ground beef (if you want gravy don't use lean meat, but find some that has fat in it)
1 egg slightly beaten
1/3 cup ketchup
2 tsp Worcestershire sauce
1 tsp salt
1 cup oats
1/2 tsp pepper
1/2 tsp garlic powder
1 Tbsp onion powder
1 tsp Chili powder

Mix all the ingredients together then form into one large meatloaf or two small ones. Before baking smear a little ketchup on the meat loaf.

Bake at 350 for about 1 hour (large loaf) and 45 minutes (mini.) Once the meatloaf is cooked set on a plate and let cool while you make your gravy. Pour the juices from the baking dish into a sauce pan and add flour to make a paste. For ever 1 tbsp of flour you use add 1/2 cup of milk. Cook over medium low heat, stirring constantly, until thick. Add salt and pepper to taste. I usually add a little garlic and onion powder too.

**Note**Although, most the time I make meatloaf it falls apart as I try to cut it, it still tastes yummy. If you have any tips or advice on how to make a meatloaf that slices I'd love your help.
