Chicken Hawaiian

Sorry I haven't blogged in a while, but starting a new job has taken more energy than I expected it would. Work is going great and I'm enjoying it a lot. (In case you were wondering) My posts may come less often for now, but don't worry once I get back into the routine of work I'll start posting again.

The recipe below is one I got from my Mom about a year ago. I don't ever remember eating it growing up, but she said it was one of my Grandma's favorites. This is the second time I have made it and it was really good with rice and on crunchy noodles. Try it either way and I'm sure you'll love it.



Chicken Hawaiian

½ cup Onion chopped
2 Tbl Butter
10 oz frozen peas
1 ½ cups Celery but
1 can chicken broth
¾ cup water
3 Tbl soy sauce
8 ¾ oz can pineapple tidbits (1 cup)
¼ cup Corn starch
¼ cup Water
3 cups diced chicken (cooked)
5 oz Water Chestnuts (drained and sliced)

1. Cook onion in butter until tender not brown.
2. Stir in peas, celery, chicken broth, ¾ cup water, soy sauce.
3. Drain pineapple saving juice. Add juice to sauce pan bring to a boil.
4. Cover and simmer 5 minutes.
5. Stir cornstarch in ¼ cup water. Add to saucepan.
6. Cook and stir until thickened and bubbly.
7. Add chicken, pineapple, chestnuts, heat through
8. Serve over hot rice

**Note** This recipe is also good for leftovers. I recommend re-heating it on the stove and not in the microwave. It turns slightly gelatin like when refrigerated and returns to it original state better when heated on the stove.**
