Cherry Cheesecake Cake
1 box white cake mix (and whatever ingredients the box calls for)
2 packages cream cheese (8oz each, softened)
4 cups powdered sugar
1 pint whipping cream (whipped)
2 cans Cherry Pie filling (or flavor of choice)
Prepare cake according to the directions on the box. Pour the batter into two greased 9x13 glass dishes. Bake until toothpick comes out clean. Let cakes cool.
Beat cream cheese and powdered sugar together until completely mixed. Fold in whipped cream.
Spread the cream cheese mixture evenly over each cake. Carefully spread the Cherry Pie filling over the top. Refrigerate 4 hours or overnight.
Serve and enjoy!
**Note: I did not need two cakes, since I was only needing to feed 9 people. So instead I baked the cake as I explained above, but halved the remaining ingredients and only made one Cherry Cheesecake Cake.

This is what I did with them. (Well not the whole tray, but the 2nd and 5th rows from the left)

Cake BallsI crumbled up the remaining white cake into a bowl. Then I took a handful and squeezed it together until it stayed in a little ball. I have also heard of some people mixing in a little frosting for moisture, but I didn't have any on hand, so I decided to skip that step. Once I made all the cake balls, I melted chocolate chips and dipped each ball in until fully coated. I let them set on waxed paper until the chocolate hardened.
This was the first time I ever made cake balls, but Chris and I really enjoyed them and my students at school did too. I think I may have to make some for Valentines Day! Maybe I'll even add pretty pink and red sprinkles.
