Blackberry Pie

I am proud to announce that I made my first Blackberry pie last week!!!

When we were at Coscto I saw they had a big container of blackberries for a good price and asked Chris if he wanted a pie. I already knew his answer would be yes, but I thought I would ask anyway. So I bought a container in faith that I would be able to accomplish this task. Now, after eating the pie, I'm wishing I had bought two containers (to save one for later.) For now I am just hoping they still have them on our next Costco visit.

I wish I could say I made this recipe myself, but I didn't. I followed the directions exactly how my Better Homes and Gardens cook book told me. The only thing I did change, was I only had 4 cups of blackberries and the recipe calls for 5. The pie still turned out fine.

First, Here is the recipe for the pie crust.

2 cups flour
2/3 cup shortening
6 Tbsp. ice water
1 tsp salt

Cut the shortening into the flour and salt. Add ice water and stir with a fork. Make into two balls. (use your hands as little as possible)

Chris' sister gave me this handy gadget to help with the sizing of the pie crust. It was nice to have the circles, but the dough kept sticking, so I had to add quite a bit of flour and keep moving the dough. I do recommend it, but just use it carefully.

Here is the pie filling.

5 cups blackberries
3/4 to 1 cup of sugar
1/3 cup all purpose flour


Mix together sugar and flour. Stir in berries. Transfer the berry mixture into the pie crust. Top with the second pie pastry and roll & pinch the crust. Cut four slits into the top crust to let steam out. Cover the crust with foil, or handy dandy crust protector and bake at 375 for 25. Remove foil/protector and bake for another 25 to 30 minutes or until filling is bubbly and crust is golden.

Serve warm with vanilla ice cream for best flavor!!!
