Pink Lemonade Cake

Some of you may know me.....some may not. I am Cheryl's sister. I do not have a blog of my own, so my sister has agreed to let me post some of my recipes on her site.


I found this recipe in a cookbook by the Deen Brothers and got super excited, My sister and I love Pink Lemonade Pie (if you refer back to her post in June of this year she posted that recipe,) so naturally I got super excited for a cake recipe.......... I do have to say that the Pie is still a little higher on my list than this cake, but I am a pie kind of girl......however if cake is your thing, then this recipe is a must. When it is winter and you can't justify an ice cream pie you can try this... Oh, and I am sure you know that Cheryl is the most incredible cupcake maker, I think that these would make an exceptional cupcake.....maybe some lemon zest on top hummmmmmmm...... any ways here it is.




1 Package white cake mix

4 tbsp pink lemonade powder (I used Country Time)

3 eggs

1/3 cup vegetable oil

1tsp lemon zest

* Mix white cake mix with pink lemonade powder, and then prepare cake according to package directions. Most likely it will call for 3 eggs, 1/3 cup of veggie oil and then add the lemon zest. The cake mix I bought also called for water, use your best judgment here.....bake at 350- and time it according to whatever size pan you are using.

Frosting

1 pound powderd sugar

1/2 cup unsalted butter softened

4 tbsp pink lemonade concentrate ( frozen )

1 tsp vanilla

The zest of one lemon


*Beat together butter and powdered sugar until fluffy then add pink lemonade concentrate, vanilla and lemon zest......


*Frost and enjoy!!!!!!!
