Cream Cheese filled Strawberries

I made these delicious bit sized desserts this afternoon. I saw them on another blog a few weeks back, but didn't save the link. I made them from what could remember of the recipe and they turned out wonderful. I can't wait to make them for a crowd and see what others think. Here is what I did.

2 baskets of strawberries
1 package cream cheese
6 tbsp powdered sugar
1tsp vanilla extract

Wash strawberries and cut off the top and enough of the tip so the strawberry can stand on their own. Use a spoon or a melon scooper to hollow out the middle of the strawberry.

Mix cream cheese with electric hand mixer. Add powdered sugar and vanilla. Beat until well combined and fluffy.

Put a 1m star tip into a disposable decorating frosting bag. Spoon cream cheese mixture into the bag and work down to the tip. Pipe into each strawberry.

Enjoy! (But don't eat too many)

You're right Marcie, that is great idea for a cake topper. I'll have to keep it in mind!
