My Mother-in-law got me a Martha Stewart cake decorating kit for Christmas that I LOVE!!! I have been decorating cakes and cupcakes like crazy with it ever since. I figured what better way to celebrate Mothers day than to make her some cupcakes and show her how much I appreciate the gift. I got adventurous and decided to try filling the cupcakes. I had never done it before, but it turned out to be a huge success.
(I think my sister was right when she told me I need to open a Cupcake shop don't I look like a natural?!)

The cupcakes were actually REALLY easy to make. I think everyone should try it. Here is what I did.
1 box cake mix (or a cupcake recipe if you have time to do it from scratch)
1 8oz package cream cheese
1 cup sliced strawberries
1/2 cup powdered sugar
Frosting
Bake cupcakes according to package directions and let cool.
With a hand mixer, mix together cream cheese and powdered sugar. In a food processor or blender puree strawberries. Add puree to cream mixture and mix until well blended (you may need to add more powdered sugar to taste if it isn't sweet enough for you.)
In a pastry bag or cake decorator insert tip 1M (large star shape) or something similar. Insert it down into cupcake about 1 inch. Squeeze until top of cupcake starts to crack (because the inside is busting at the seems)
Once all the cupcakes are filled decorate with frosting and enjoy with your loved ones.
