Cherry Crisp (with Apples)

A couple weeks ago while we were up in Fresno, Chris's Mom sent us home with several bags of Cherries. We took them in our lunch almost everyday, and then decided we needed switch it up a little and make something with them. Cherry pie sounded good, but I wasn't in the mood to make pie crust, so what better substitute than a Crisp This recipe is from my Better Homes and Gardens Cook Book, but adjusted slightly because I wanted apples too.

4 cups pitted red cherries
1 cup peeled and sliced apple
1/2 cup granulated sugar
3 tbsp flour
1/2 cup oats
1/2 cup packed brown sugar
1/4 cup flour
1/4 tsp cinnamon
1/4 cup butter
1/4 cup coconut
**Ice Cream

-Mix cherries, apples, granulated sugar and 3tbsp flour.together and place in a sprayed 2 quart square baking dish.
-Next in a medium bowl combine the oats, brown sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs. Stir in the coconut. Sprinkle topping over fruit.
-Bake @ 375 for 30-35 minutes or until fruit is tender.

**I suggest serving it warm with Vanilla Bean ice cream. I guess you could eat it alone, but with the ice cream melting on top it was DELICIOUS!!!!
