Zucchini Tots

I am guilty of being a fan of Pinterest and spending my fair share of time browsing through pages and pages of all it has to offer. I am, however, bound and determined not to be one of those people who simply pins ideas and never actually does anything with them. So this blog is dedicated to all my fellow pinterest lovers!

Here is the blog where I found the original recipe http://curiouscountrycook.blogspot.com/2012/03/zucchini-tots.html . I modified it slightly and mixed it together in a different order.  Here is what I did.

Zucchini Tots


1 cup grated zucchini (*wrung dry in a towel)
1/4 yellow onion (diced into small pieces)
1/4 cup Parmesan cheese
1/3 cup whole wheat bread crumbs
Salt and Pepper to taste
1 egg (beaten)

-Preheat oven to 400F. Spray your mini muffin tin with olive oil cooking spray and set aside.
-Mix together zucchini, onion, cheese, bread crumbs and salt and pepper. Taste to make sure it has enough salt and pepper. Last, add the egg and mix all together.
-Then using a #50 scoop (or whatever you may have on hand) evenly divide the mixture into the muffin tin.
-Bake for about 18 minutes or until tots have reached your desired level of doneness (not a real word I know, but still the word I am choosing to use.)

*Make sure to wring the zucchini to get out all the extra water.  Otherwise the tots will be soggy and NASTY.*

Christopher and I gobbled these up in a mater of minutes.  They were so yummy I even made another batch today for our afternoon snack.  It is a great way to use up the zucchini that is overflowing from everyone's gardens this time of year!

I am guilty of pinning and not making any but at least I have not kidded myself about it! LOL

I don't know what Pinterest is, but I'd eat Zucchini Tots. Hey, you should abbreviate and call them ZiTs. lol
