Chicken & Dumplings


I don't have much in the cupboards lately (Saturday is my grocery shopping day) so dinner has been a challenge the last few days. I know Chris loves Chicken pot pie and I had all the ingredients, but I need the milk to last us a few more days so I decided to try my hand at Chicken & Dumplings. I must say for my first try it was very simple and absolutely delicious. I hope you all find time to make and enjoy a pot before the winter season is over.

Chicken & Dumplings

8 cups chicken broth
2 boneless skinless chicken breasts
2 large carrots (cut into slices)
2 large celery sticks (cut into slices)
1 medium onion (chopped into small pieces)
3 medium red potatoes (cut into fourths)
1/4 tsp. poultry seasoning
salt and pepper to taste
2 1/4 cups bisquick
2/3 cup milk

1. Fry chicken breasts or cook in microwave and shred into smaller pieces.

2. In a 5 quart pot bring chicken broth to a boil.

3. Over medium heat saute onions in a little bit of olive oil or butter. After 2 minutes add carrots and celery. Saute for 2 minutes longer.

4. Add the veggies along with the shredded chicken to the boiling broth. Add poultry seasoning and salt&pepper. Let boil for about 5 minutes or until veggies begin to soften. Continue to let boil.

5. Add the potatoes to the pot.

6. Mix together the bisquick and milk then drop by the large spoonful into the boiling pot (I use my cookie scoop) Cook for 10 minutes with the lid OFF and then finish with the lid ON for 10 minutes.

Dinner is ready to be served!!!!

**Note** This recipe makes quite a bit. It is the perfect amount if you are cooking for 4 people or if you love leftovers, but feel free to half the recipe if you are only cooking for one or two.
